Kevin Fox’s interest in health and nutrition started long before he ever considered writing a book. A lifelong fitness enthusiast and self-described “health nut,” he spent years reading about nutrition, experimenting with different eating styles, and searching for ways to improve energy, focus, and overall well-being. Yet despite doing many of the “right” things, he continued to struggle with recurring headaches, including frequent migraines, that never fully went away. Medical answers were limited, and standard advice offered little lasting relief.

Frustrated but curious, Kevin began looking beyond calories and macros, digging deeper into how specific foods might affect the body in less obvious ways. Around the same time, his mother was diagnosed with lupus, an autoimmune condition that brought a new sense of urgency to his search. When she noticed meaningful improvement after removing gluten from her diet, despite having no diagnosed allergy, it raised an important question: if it wasn’t gluten itself, what was actually causing the reaction?

That question led Kevin to lectins, naturally occurring plant proteins that may contribute to inflammation and immune reactions in some individuals. What began as personal research soon turned into years of careful study, testing, and real-world experimentation. Over time, he refined his approach to eating and saw profound changes; chronic headaches faded, digestive issues resolved, and long-standing back pain nearly disappeared. His mother, too, found ways to better manage pain and fatigue by understanding how certain foods affected her body.

Living Low-Lectin grew out of this shared journey. Rather than promoting rigid rules or food fear, Kevin’s work focuses on awareness, flexibility, and practical understanding. His goal is to help people feel more in control of their health by learning how food interacts with their unique biology, without guilt, confusion, or hype.
