
Evening meals have a different job than breakfast or lunch. By dinner, the day has already asked plenty from the body, and a meal that is enormous, greasy, heavily seasoned, or packed with raw vegetables can sometimes leave a person feeling uncomfortably full just when they would rather settle down for the night. Raw vegetables have plenty to offer nutritionally, but a huge salad is not automatically the best dinner for every stomach. Plant cell walls influence how nutrients and digestive enzymes interact with food, and heat changes those structures. Cooking can soften plant tissue, alter cell walls, and make many vegetables considerably easier to chew and break apart than they were in their raw form.

Preparation matters. Give Dinner Some Space Before Bed
